Red Borscht with Beans and Pickled Cucumbers

Let's prepare an unusual red borscht with pork broth, beans, and pickled cucumbers. While beans in borscht are common, the addition of pickled cucumbers, especially with sour cream, might be unfamiliar to some. Don't be intimidated by the long list of ingredients; the result is a very flavorful, rich, aromatic, and nutritious borscht.

Instructions

Prepare all ingredients according to the list.

Place the meat in a pot, cover with water (1.7 L), and bring to a boil. After boiling, skim off any foam with a slotted spoon and simmer the broth for 1 hour.

After an hour, remove the meat from the broth, cut it into pieces, and return it to the pot. Add a bay leaf and continue to simmer the broth for another 40 minutes.

Grate the peeled beet on a medium grater.

Heat 1 tablespoon of vegetable oil in a pan, add the beet, and sauté for 3 minutes, stirring occasionally.

Dice the peeled onion. Grate the peeled carrot on a medium grater.

In a separate pan, heat 1 tablespoon of vegetable oil and sauté the onion and carrot for 3 minutes, stirring occasionally.

Add tomato paste to the vegetables and simmer over low heat for 2-3 minutes.

Cut the peeled potatoes into medium pieces.

Add the potatoes to the broth with the meat.

Also add the sautéed beet, carrot, and onion.

Add the beans. Cook the borscht for 20 minutes.

Prepare the dressing: grate the pickled cucumbers on a medium grater.

Heat a dry pan, add the cucumbers, and simmer for 2 minutes. Add sour cream and simmer for another 1 minute.

Shred the cabbage into thin strips.

Peel and mince the garlic. Add the cabbage, cucumber dressing, and garlic to the pot. Season with salt and pepper. Cook for another 10-15 minutes. Remove from heat and let it steep for 15 minutes.

Ladle the borscht with beans and pickled cucumbers into bowls, garnish with chopped herbs.

Serve the borscht, optionally adding sour cream. Enjoy your meal!
