This delicious and easy-to-prepare pea soup with cheese is an ideal option for a homemade lunch. Vegetables are added to peas boiled until tender, and at the end of cooking, the soup is seasoned with grated cheese, herbs, and spices.
Instructions
Prepare all ingredients. For faster cooking, it is recommended to use split peas. Purchase good quality hard cheese to ensure it melts well.
Rinse the peas thoroughly under running water several times. Cover with cold water and let soak for 5-6 hours.
Rinse the soaked peas and cover them with boiling water in a pot. Bring to a boil over moderate heat and cook until tender. For split peas, this may take about 1 hour. Cooking time depends on the variety and size of the peas.
Peel and rinse the carrot and potato. Grate the carrot on a large grater. Cut the potato into cubes. When the peas are soft, add the vegetables to the pot. Bring to a boil and cook for 15-20 minutes, until the potatoes are tender.
Grate the cheese on a fine or medium grater. When the potatoes are soft, add the cheese to the pot. Stir and bring the soup to a boil. Cook for 2-3 minutes over low heat until the grated cheese has melted.
Season with salt and ground black pepper to taste. Mince the parsley and add it to the soup. Bring to a boil and cook for 1-2 minutes. Turn off the heat.
The pea soup with cheese is ready.
Ladle the soup into bowls and serve.
Enjoy your meal!
