We suggest preparing a wonderful Lenten pea soup with lightly salted cucumbers for the Christmas fast. Enjoy your fast with pleasure.
Instructions
Rinse the peas thoroughly, place them in a pot, and cover with cold water. Place the pot over heat, bring to a boil (skim off any foam). Simmer the peas over low heat until cooked (about an hour).
Peel, wash, and dice the potatoes.
Add the potatoes to the peas. Cook everything together over low heat for 15-20 minutes.
Peel and wash the onion and carrot. Grate the carrot on a large grater. Dice the onion.
Grate the cucumbers on a large grater.
Heat a frying pan, pour in vegetable oil. Add the onion and carrot to the hot oil. Sauté over medium heat, stirring, for 2-3 minutes.
Then add the cucumbers, stir, and sauté for another 2-3 minutes.
Add the sautéed vegetables to the pot with the soup, season with salt and pepper.
Simmer the pea soup for another 5-7 minutes with the lid on over the lowest heat. Wash and chop the dill. Add it to the soup, bring to a boil, and remove the pea soup from the heat. Pea soup with lightly salted cucumbers is ready.
The pea soup is ready to serve. Enjoy your meal!
