This easy-to-prepare chicken noodle soup is a wonderful meal for the whole family.
Instructions
Prepare all the ingredients for the soup. Peel and thoroughly wash the vegetables.
Rinse the chicken fillet, pat it dry, remove any membranes, and cut it into large pieces.
Place the chicken in a pot, cover with cold water, and add bay leaves. Bring to a boil, then skim off any foam. Cook the chicken fillet for 15 minutes, then remove it and set aside.
Grate the carrots on a coarse grater.
Dice the onion finely.
Heat vegetable oil in a pan. Sauté the diced onion over medium heat for 2-3 minutes until soft.
Add the grated carrots to the onion, stir, and continue to sauté the vegetables for another 2 minutes.
Cut the potatoes into medium cubes or sticks.
Cut the cooked chicken fillet into smaller pieces.
Add the potatoes to the boiling broth and cook for approximately 10 minutes.
Then, add the prepared sautéed vegetable mixture.
Return the diced chicken fillet to the soup.
Add the vermicelli to the soup, season with salt and freshly ground pepper to taste. Stir and cook the soup for another 5-7 minutes. Optionally, you can add chopped fresh parsley.
Let the finished soup rest for a few minutes. Ladle the soup into bowls, sprinkle with fresh herbs, and serve. Enjoy your meal!
