Minestrone is an Italian vegetable soup. This variation of the soup is prepared with beans, pasta, and cheese.
Instructions
To prepare Italian minestrone: peel the carrot and grate it on a coarse grater.
Cut the bell pepper into small cubes.
Score the tomatoes crosswise.
Boil water. Pour boiling water over the tomatoes for 1 minute. Then drain the water.
Peel the skin from the tomatoes. Cut them into small cubes.
Heat vegetable oil in a pan. Add the carrot and bell pepper, sauté for 5 minutes, stirring.
Add the tomatoes and simmer, stirring, for another 5-7 minutes.
Grate the cheese.
Add the stewed vegetables to boiling water or vegetable broth. Season with salt and spices to taste.
Add the beans.
Then add the pasta. Cook the minestrone for 10 minutes.
Add balsamic vinegar.
Stir in the grated cheese. Mix and remove the minestrone from the heat.
Minestrone soup is ready. Enjoy your meal!
