By opening a jar of aromatic lecho, you can prepare a delicious and vibrant Lenten soup in just 20-25 minutes. Lecho, potatoes, salt, pepper, and fresh herbs — these are all the ingredients needed for a hot lunch. Very convenient when time is short!
Instructions
Prepare the necessary ingredients.
Bring approximately 900 ml of water to a boil in a pot. Peel the potatoes and cut them into small cubes.
Add the potatoes to the boiling water.
Cook the potatoes over medium heat for approximately 15-20 minutes after boiling, until tender.
Lightly mash the cooked potatoes with a potato masher or fork.
If the bell pepper strips from the lecho are wide, cut them into thinner strips.
Finely chop the parsley and basil with a knife.
Add the lecho to the pot with the potatoes.
Reduce the heat to a minimum and simmer the soup for approximately 5 minutes. Season the soup with salt to taste 2 minutes before the end of cooking.
Turn off the heat and add black ground pepper.
Add the herbs.
Stir lightly — the aromatic Lenten soup with lecho is ready.
Ladle the soup with potatoes and bell pepper into bowls and serve. Enjoy your meal!
