Rassolnik with Canned Salmon

This unusual rassolnik with canned salmon is a soup you'll want to make more than once.

Instructions

Cut the carrots into julienne strips.

Finely dice the onion.

Finely dice the cucumbers.

Cut the potatoes into medium cubes and send them to boil in 2 liters of water along with the rice.

In a pan, sauté the onion and carrot in vegetable oil. Once the carrot and onion are sautéed, add the tomato paste, cucumbers, and pour in 0.5 cups of water, then leave to simmer for 15 minutes.

Transfer the contents of the pan to the pot with potatoes and rice. Stir. Add the canned salmon, season with salt to taste. Before removing the rassolnik from the heat, add finely chopped garlic and lemon zest.

Rassolnik with salmon is ready!
