This lentil soup with tomato is very hearty. It is easy and quick to prepare.
Instructions
Prepare all necessary ingredients.
Rinse the lentils until the water runs clear (usually 3 times).
Peel and chop the potatoes. Add them to the pot with the lentils and cook for 15-20 minutes.
Peel and wash the carrots, grate them on a coarse grater. Dice the onion.
Heat vegetable oil in a pan. Sauté the onion and carrot, stirring, for 3-4 minutes over medium heat. Then add flour, stir. Add tomato paste and simmer, stirring, for 1 minute.
Transfer the sautéed vegetables with tomato paste to the soup pot.
Peel and cut the bell pepper into strips. Mince the garlic. Finely chop the herbs.
Add the sliced bell pepper, minced garlic, and herbs to the soup. Season with salt and pepper to taste. Add a bay leaf. Cook over low heat, covered, for 5 minutes.
