This aromatic and hearty soup with meatballs, canned beans, and a vegetable sauté is quick and easy to prepare. Meatballs made from pork and beef mince, combined with beans, make the dish nutritious, while the sautéed vegetables add a vibrant flavor.
Instructions
Prepare all necessary ingredients. Drain the liquid from the canned beans. Peel the vegetables.
Pour 1.5 liters of water into a pot and place it over medium heat. Season the mince with salt and pepper, then mix thoroughly. Using wet hands, form small meatballs from the mince.
Cut the potatoes into medium cubes.
Once the water in the pot boils, add the meatballs and diced potatoes. Cook for 15 minutes.
Meanwhile, finely chop the onion. Heat vegetable oil in a frying pan and sauté the onion for about 3 minutes.
Grate the carrots on a coarse grater. Add the grated carrots to the onion in the pan and sauté for another 3 minutes.
Cut the tomatoes into medium cubes and add them to the vegetables in the pan. Simmer over low heat for 5 minutes.
The vegetable sauté is ready.
Add the beans, vegetable sauté, bay leaf, black peppercorns, and khmeli-suneli to the pot. Season with salt and pepper to taste. Bring the soup to a boil and cook for 5 minutes.
Finely chop the fresh parsley and add it to the soup. Heat the soup for another couple of minutes, then turn off the heat. Let the soup rest for 10 minutes.
Ladle the soup into bowls and serve. Enjoy your meal!
